When are peaches in season?

Pasta salad with burrata and peach

Pasta salads are always a good idea in the summer if you ask me. This pasta salad with burrata and peach is so delicious for several reasons. First of all, burrata. Do I need to say more? The creamy burrata contrasts beautifully with the sweet and juicy peaches. Add in the salty ham and sweet honey (or agave syrup) and you have a little bit of everything! For crunch, I add some pistachios, but you could also use croutons, for example. This are very tasty.

What you need:

150 gr pasta
1 bulb of burrata
2 peaches
2 tbsp pistachios
5 sprigs of basil
4 slices of parma ham
2 tbsp. honey or agave syrup
salt and pepper
olive oil

What to do:

Bring a pan of water to a boil and cook the pasta in it according to the package directions. Then drain the pasta and rinse with cold water so that the pasta cools.

Meanwhile, cut the peaches into 0.5 cm thick wedges. Heat some olive oil in a grill pan and grill the peaches in it for 2 minutes on each side.

Meanwhile, chop the pistachios and basil.

Spoon the pasta onto the plate and top with the peaches, burrata and Parma ham. Then sprinkle with the pistachios, basil, some olive oil and salt and pepper. Top with some honey.
