What you need:

250 gr halloumi
10 apricots
2-3 beef tomatoes
1 tbsp. honey
juice of 1 lime
few slices of jamón of your choice
prosciutto, serrano etc.
fresh basil
good olive oil
salt and pepper
optional: chili flakes

What to do:

Cut the apricots into wedges and the tomatoes into nice slices.

Cut the halloumi into cubes. Heat some olive oil in a frying pan and fry the halloumi cubes nice and golden brown all around.

Place the tomatoes, apricots and halloumi in a bowl and add the honey, extra olive oil, lime juice, a generous pinch of salt and pepper along with any chili flakes. Mix everything together well.

Divide the salad among plates or bowl and garnish with the jamón and basil.
