What you need:

1 roll of puff pastry
10 figs
1 piece of brie
1 tbsp (herb) cream cheese
1 egg
1 tsp dried thyme
olive oil
salt and pepper
2 tbsp balsamic cream
version chives and/or fresh thyme

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper. Roll out the puff pastry over the baking sheet and poke some holes in the bottom.

Cut the figs and brie into thin slices. Spread the puff pastry with the cream cheese and top with the fig and brie slices. It doesn't have to be neat, just alternate everything a bit.

Fold the edges over so that you get the shape of a galette. Beat the egg and brush the edges with it. Sprinkle the edges with the dried thyme. Season the sheet cake with salt, pepper and olive oil and slide it into the oven for 20 minutes. After 20 minutes, turn the oven to the grill setting and turn it up a little higher. Now stay with the oven until the sheet cake is nicely golden brown.

Serve the sheet cake warm. Garnish with the balsamic vinegar and fresh chives and/or thyme.
