Persimmon galette. 🍊 When eating persimmons (kaakie, because Persimmon galette. 🍊 When your nickname is “kaki” (kaakie, because of my last name), you can’t skip persimmon season. (That’s also why I refuse to call it a persimmon.) This is the easiest, low-effort pastry you’ll make this season. It’s so good, trust me. groceries 🛒 1 roll of round puff pastry 1 very ripe, soft kaki 1 tbsp brown sugar 1 tbsp butter 2 kakis, thinly sliced 1 egg, beaten 2–3 tbsp slivered almonds 1 tbsp powdered sugar Preheat the oven to 200°C and line a baking sheet with parchment paper. In a bowl, mix the flesh of the very ripe persimmon with the brown sugar and butter. Warm briefly in the microwave and stir until the butter has melted completely. Roll out the puff pastry in front of you and fan the persimmon slices out from the center, leaving a 3–4 cm border around the edge. Pour the mixture over the top and spread it over the open edges as well. Fold the edges inward and brush them with the beaten egg. Sprinkle the flaked almonds over the top. Bake for 20–40 minutes, until nicely golden brown. Let cool for a few minutes, dust the edges lightly with powdered sugar, and serve. #persimmon #galette #baking #autumn

Banana bread with dates. 🍌 Fun fact: my very first Banana bread with dates. 🍌 Fun fact: my very first blog recipes were banana breads. A decade and hundreds of loaves later, I dare say I’ve cracked the code. This is my take on a fall banana bread with dates and gingerbread spices (koek and speculaas spices for my Dutch friends). Your kitchen is guaranteed to smell amazing. groceries 🛒 6 dates 3 bananas 3 eggs lemon juice 100 gr full-fat Greek yogurt 4 tbsp olive oil
100 ml milk of your choice 150 gr almond flour 150 gr oat flour 30 gr coconut flakes 1 tbsp gingerbread/speculaas spice mix (or cinnamon) 1 tsp baking powder 1 tsp baking soda pinch of salt Preheat the oven to 200°C and line a loaf pan with parchment paper. Pit the dates, cut them into small pieces, and soak them briefly in lukewarm water. In a large bowl, mix the almond flour, oat flour, coconut flakes, gingerbread spice (or cinnamon), baking powder, baking soda, and salt. In another bowl, mash 2 bananas and mix with the eggs, a splash of lemon juice, Greek yogurt, olive oil, and milk. Add the wet ingredients to the dry ingredients and stir to combine. Fold in the dates. Pour the batter into the pan. Slice the third banana in half lengthwise and place it on top, cut side up. Bake for 70 minutes. If the top gets too dark halfway through, cover it loosely with aluminum foil and finish baking. Let it cool in the pan first, then transfer it to a wire rack to cool completely before slicing. (The hardest step. Good luck.) #bananabread #valencia #baking
