What you need:

1 leek
300 gr sprouts
cleaned and halved
olive oil
1 tsp garlic powder
salt and pepper
7 eggs
2 tsp mustard
75 gr feta cheese
1 tsp dried thyme
1 tsp dried oregano

Cut the leeks into thin rings. Clean and halve the Brussels sprouts. Heat some olive oil in a frying pan and fry the leeks in it for 2 minutes. Then add the Brussels sprouts and stir-fry for about 10 minutes. Season with garlic powder, pepper and salt.

Grease a (round) baking dish and divide the leeks and Brussels sprouts among the baking dish.

Beat the eggs with the mustard, dried thyme, dried oregano, feta and some salt and pepper. Mix everything well and then pour over the vegetables in the baking dish. Top with some additional dried herbs, salt and pepper and slide into the oven for 25 minutes. Then turn the oven to the grill setting and bake for another 5 minutes.
