It is similar to sashimi or ceviche, but is distinguished by its simplicity and subtlety. Whereas ceviche is often cooked in citrus and sashimi is served pure, crudo instead revolves around a delicate balance of raw product and light seasonings.

Tuna is particularly suitable for crudo because of its firm texture and mild, almost buttery flavor. The meat is tender and rich, absorbing flavors well without losing its character. Serving it raw keeps the tuna pure and fresh, creating an elegant dining experience where every flavor component counts.

This version of tuna crudo opts for a playful, summer twist with orange and chili. The sweetness and freshness of the orange bring the tuna to life, while the chili provides a subtle heat that lingers without being overpowering. The little green chili I use is called the guindilla here in Spain. These are nice and spicy and you can just find them in a jar. You can also use red chilies or even jalapeños. The result is a dish that is bright and pronounced, yet remains refined.

The citrus lifts things up and provides a light acidity that works perfectly with the natural richness of the tuna. The chili brings contrast, spice and tension - just enough to keep it exciting without overpowering the delicate character of the fish.

What you need:

1 organic orange
1/2 lemon
3 tbsp soy sauce
1 tsp rice vinegar
1 tsp honey
175 gr fresh tuna
pepper
red pepper, jalapeño or guindilla
fresh chives

What to do:

Mix the juice of the orange with the juice of the lemon, soy sauce, rice vinegar and honey to make a dressing. Don't discard the orange yet, as we'll need the grater as well.

Thinly slice the tuna and finely chop the chives. Thinly slice the pepper.

Place the tuna on a plate and pour the dressing over the tuna. Divide completely over the plate.

Divide the chili pepper, orange zest and chives on top and serve.
