What you need:

For the artichokes
240 gr canned artichoke hearts
1 tsp garlic powder
1 tsp onion powder
20 gr Parmesan cheese
1 lemon
salt and pepper
2 tbsp olive oil
For the lemon aioli
200 ml of sunflower oil
1 egg
2 cloves of garlic
pinch of salt
1 lemon

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper.

Drain the artichoke hearts and pat/ squeeze dry well with a piece of kitchen paper.

In a bowl, mix the olive oil with the garlic powder, onion powder, the Parmesan cheese, the juice and zest of the lemon and some salt and pepper. Add the artichoke hearts to this and mix. Make sure everything is well coated.

Place the artichoke hearts on the baking sheet and slide into the oven for 15 minutes. Then turn the oven to grill mode and bake for another 5-10 minutes until crispy.

Meanwhile, make the lemon aioli. Put the garlic together with the egg, the juice and zest of the lemon and a pinch of salt in a measuring cup. Then put the hand blender in, but do not turn it on yet.

Pour in the sunflower oil and now turn on the hand blender. Pull it up in a very slow motion so that the oil slowly mixes with the egg and garlic. When you get to the top, you will have a creamy lemon aioli.

Spread the aioli on a plate and top with the crispy artichoke. Garnish with some lemon zest and additional Parmesan cheese.
