Roasted fennel with herb yogurt

10 minutes + 45 minutes oven

Roasted fennel with herb yogurt is a simple and flavorful vegetable dish. Roasting makes fennel soft and sweet, while the creamy herbal yogurt adds fresh and spicy notes. This dish is healthy, versatile and perfect as a side dish or light meal, ideal for anyone who loves seasonal vegetables.

What does fennel taste like?

Fennel has a unique flavor unlike many other vegetables. The fresh anise notes are instantly recognizable, but when fennel is roasted in the oven it develops a mild, almost caramel-like sweetness. This flavor development makes the vegetable versatile and attractive for a variety of dishes. In salads, fennel is often used raw for its crunchy texture and distinct freshness. When cooked in the oven, that texture actually changes to soft and unctuous, while the flavor deepens and becomes more round and full.

What makes fennel special is that its flavor easily combines with both savory and fresh elements. Think citrus fruits, garlic, olive oil and Mediterranean herbs. When combined with a yogurt base with dill, parsley or mint, the anise flavor of fennel is softened and complemented. This makes roasted fennel with herb yogurt a dish that brings harmony between sweet, fresh and spicy. It is a flavor experience that does not get bored easily, precisely because the vegetable has so many layers. Its rich flavors make fennel ideal for people who want to explore new vegetable flavors while looking for a light, healthy addition to their meals.

This recipe is also interesting from a practical standpoint. Fennel is available in many seasons and relatively affordable, making roasted fennel with herb yogurt easy to put on the table without having to be complicated or expensive. Moreover, it is a dish that invites variation: the herbs in the yogurt can be changed according to the season or personal preferences. Thus, it remains a little different each time, but always recognizable in its base.
