For the orange ricotta
150 gr ricotta
1 orange
grater and juice
salt and pepper
For the brioche
4 slices of brioche
1 tbsp butter
4 pieces of anchovies
fresh chives
garnish: edible flowers and salmon eggs

What to do:

Mix the ricotta with the juice and zest of the orange. Add some pepper and salt and whisk with a food processor or whisk to make a creamy ricotta. Optional: then put into a piping bag to pipe it nicely onto the brioche later. You can also use a ziplock bag or sandwich bag.

Melt the butter in a frying pan and fry the brioche in it all around until golden brown. Meanwhile, finely chop the chives.

Spread the orange ricotta over the brioche and top with the anchovies. Garnish with the chives, edible flowers, salmon eggs and a pinch of black pepper.
