What you need:

100 gr fuet
1 shallot
40 gr pickle
1 tbsp capers
1 tsp coarse mustard
juice of 1/2 lemon
1 egg yolk
salt and pepper
olive oil
serving tip: on a chip or toast

What to do:

Remove the skin from the fuet and chop finely. Also finely chop the pickle, capers and shallot. You can also put everything in a food processor or chopper.

Place the fuet, pickle, capers and shallot in a bowl and add the egg yolk, mustard, lemon juice and some salt and pepper. Mix everything well.

Serve the fuet tartare on a chip, toast or piece of brioche.
