The fish is cut into small pieces and marinated in a mixture of lime or lemon juice, which cooks the fish without heat, so to speak. Then add ingredients such as chili, cilantro, onion and possibly coconut milk or curry for extra flavor. The secret to a perfect ceviche is in the timing: too short and the fish is too raw, too long and it becomes tough. By making your own ceviche, you can adjust the flavors exactly to your own preferences, vary the seasonings and spiciness, and create a fresh, light meal that's quick on the table and impressive looking.

What fish in ceviche

With ceviche, you can choose from many different types of fish, but it is important that the fish be firm, fresh and mild in flavor. Popular choices are sea bass, dorado, halibut, cod and tuna. I personally often use sea bass, known as lubina in Spanish, because of its firm texture and subtle flavor that goes well with the fresh acids and spices in ceviche. Sea bass remains juicy after marinating and absorbs the flavors of lime juice, herbs and spices well. Other types of fish may have a slightly more intense flavor or fall apart more quickly, making them less suitable for ceviche that needs to be beautifully presented. With lubina, you can vary in texture and thickness, allowing you to serve both upscale and accessible ceviche. It offers a perfect balance of flavor, presentation and consistency, making the dish both impressive and easy to make.

Green curry ceviche

Green curry ceviche combines the freshness of traditional ceviche with the spicy, aromatic notes of green curry. What you need:

1 tbsp green curry paste
200 ml of creamy coconut milk
handful of coriander
+ extra for garnish
1 lime
salt and pepper
250 gr sea bass
fresh without skin
2 mini cucumbers
sliced
1 green pepper (guindilla or jalapeño)
in rings
1/2 shallot
chopped
optional: chili flakes
optional: 1 tbsp of herbal oil

What to do:

Blend the green curry paste with the coconut milk, a generous handful of cilantro and the juice of the lime. Use a hand blender to do this.

Clean the sea bass and remove the skin if not already done. Cut into thin, oblong pieces. Divide among a nice, deep plate.

Now pour the green curry dressing over the sea bass and into the plate. Garnish with the shallot, green pepper, cucumber and chili flakes. Top with a pinch of salt and pepper.
