Zucchini galette with feta cheese

This zucchini galette with feta is perfect as lunch, brunch or appetizer. You buy the bottom ready-made and fill it with zucchini. Top the edges with sesame seeds and in just under half an hour you will have a work of art on the table. I serve this zucchini galette at almost every get-together and it is always to my liking.

What is a galette?

A galette is a French term for a flat, round and fairly thin cake or pancake made from a simple dough of flour, butter, water and salt. Popular in Brittany, a region in western France, galettes are traditionally made with buckwheat flour and filled with savory ingredients such as bacon, eggs and cheese, or sweet ingredients such as fruit and sugar. They are often baked on a hot stone plate and served for breakfast, lunch or dinner. Galettes are a delicious and easy way to enjoy the flavors of French cuisine.

I made a simpler version that you can have in the oven in less than 10 minutes. So I used a sheet of round puff pastry from the supermarket that I spread with cream cheese and topped with the zucchini. I topped the galette with cress, thyme, honey and feta. A delicious vegetarian sheet cake was the result!

Zucchini galette with feta cheese

This zucchini galette with feta can actually also be called a savory sheet cake. For the dough I used a kind of quiche/leaf pastry that you can just buy at the supermarket. The filling consists of zucchini. Zucchini is a vegetable that is generally available from spring through fall, depending on the region and climate in which it is grown. It is often associated with spring and summer because it is at its peak and more readily available at that time of year. You also notice now in the supermarket and market that they are cheaper AND a lot bigger than usual. That's because now is the time!

What you need:

1 roll of quiche pie dough
from Albert Heijn
1 large zucchini
1 egg
2 tbsp. herb cheese
2 tbsp. honey
50 gr feta cheese
cress
fresh thyme
sesame seeds
olive oil
salt and pepper
1 galette

What to do:

Preheat the oven to 180 degrees and line a baking sheet with baking paper.

Roll out the dough oven the baking sheet and poke some holes in the dough with a fork. Spread the dough with the cream cheese and season with a pinch of salt and pepper.

Thinly slice the zucchini and place on top of the cream cheese. Work in a circle, making sure they overlap. Stay about 10 cm from the edge. Then fold the edges closed over the zucchini slices so that you get the shape of the picture.

Beat the egg and spread the edges of the dough with it. Top with the sesame seeds. Brush the zucchini slices that are still visible with some olive oil.

Bake the zucchini galette for about 15-20 minutes until golden brown.

Crumble the feta over the zucchini galette and spread the honey, cress and thyme on top. Season with a little more salt and pepper.
