Whipped feta with roasted tomatoes

The perfect appetizer or drinks dip: whipped feta with roasted tomatoes. This delicious creamy dip is perfect for a drink on a summer evening or to enjoy indoors with the girls. Great with brunch, as lunch, snack or dip. You can easily make it a day in advance. It's best if you roast the tomatoes fresh on the day itself!

What is whipped feta?

Whipped feta is translated in Dutch as "whipped feta." It is a creamy and flavorful spread made from feta cheese. It is prepared by mixing feta cheese with other ingredients such as cream cheese, yogurt, lemon juice, olive oil, or herbs and spices. The mixture is whipped to a smooth and fluffy consistency, making it spreadable and dip-like.

Whipped eeta is a versatile product that can be used in a variety of ways. It can be spread on crackers or toasted bread, used as a dip for vegetables or chips or incorporated into sandwiches, wraps, salads or pasta dishes. The tanginess of the feta cheese combined with its creamy texture makes whipped feta a popular choice to flavor and add to various dishes.

How do you make whipped feta?

Whipped feta is extremely popular, still not everyone has discovered it. For example, I always serve this whipped feta with roasted tomatoes at get-togethers or birthdays and always there are people who don't know it yet. The nice thing about this recipe is that it's ready in less than 10 minutes (if you don't count roasting the tomatoes). In fact, to make the base for whipped feta, all you have to do is put the feta with some seasonings in a food processor and blend it until smooth. Of course, you can also use a hand blender for this purpose.

What you need:

Before the dip
2 blocks of feta cheese
2 tbsp olive oil
3 tbsp. creme fraiche
200 gr colored cherry tomatoes
fresh basil
salt and pepper
Topping
2 tbsp. honey or agave syrup
chopped pistachios
toasted pine nuts
1 plate

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper. Spread the tomatoes on top and drizzle with olive oil, salt and pepper. Massage in and slide into the oven for 10-15 minutes until they burst open.

Meanwhile, make the whipped feta by putting the feta in a food processor along with 2 tbsp water, 2 tbsp olive oil, the crème fraîche and a generous pinch of salt and pepper. If it remains too grainy, you can always add extra water or olive oil.

As a topping I use honey, pistachios and pine nuts, but of course you can go wild with this as you see fit. Spoon the whipped feta over a plate and smooth out. Top with some olive oil, salt and pepper, honey/agave syrup, the tomatoes, fresh basil, chopped pistachios and toasted pine nuts.
