Salmon crudo with edamame

Salmon crudo with edamame: the perfect appetizer. I prefer to cook a three-course dinner every day. I really do! So now that Sinterklaas has left our country, I can finally go all out with recipes for the holidays. This salmon crudo with edamame is super quick to prepare, great tasting and also a picture to behold.

What does crudo mean?

What does salmon crudo actually mean? The word "crudo" comes from Italian and means "raw" or "unprocessed." In dishes, such as salmon crudo, it refers to a preparation method in which salmon is served thinly sliced or thinly sliced, usually raw or lightly marinated. The term is often used in the culinary world to indicate that a dish containing raw fish or meat has been prepared and presented in a sophisticated way, often with the addition of some flavorful ingredients such as citrus juice, olive oil, herbs or other dressings. In this salmon crudo with edamame, I use a soy sauce-based dressing to give it an Asian touch.

What you need:

For the salmon
125 gr salmon steak in thin slices
2-3 tbsp edamame
½ red pepper
½ shallot
½ lime
fresh cilantro to taste
1 tsp sesame seeds
black pepper
For the dressing
1 clove of garlic
chopped
½ tsp grated ginger
3 tbsp olive oil 
1 tbsp sesame oil
3 tbsp soy sauce
1 tsp rice vinegar
1 tsp sriracha 
juice of 1 lime

What to do:

Mix all the ingredients for the dressing in a bowl and refrigerate for a while.

Chop the shallot and red pepper into very thin slices.

Spread the salmon slices on a plate. Then pour the sauce on top and sprinkle with the shallot, red pepper and edamame. Garnish with salt, pepper, sesame seeds and cilantro.
