What you need:

2 leeks
olive oil
1 tsp garlic powder
salt and pepper
1 bulb of burrata
handful of unsalted almonds
1 can of anchovies
on olive oil
fresh chives

What to do:

Heat the oven to 200 degrees and line a baking sheet with baking paper.

Cut the leeks in half across the long side and clean well. Drizzle with olive oil, garlic powder and some salt and pepper and place them inside down on the baking sheet. Slide into the oven for 15-20 minutes until they begin to caramelize nicely.

Coarsely chop the almonds and finely chop the chives. Remove the leeks from the oven and place them on a platter.

Top with the burrata and anchovies and top with the almonds, chives and some extra olive oil, salt and pepper.
