The great thing about this dish is that you fold the edges of the dough in by hand; therefore, you don't need a form to bake the cake in.

What you need:

1 roll of quiche and pie dough
2 large beef tomatoes
handful of colored cherry tomatoes
75 gr ricotta
1 egg
2 tbsp Italian herbs
fresh basil
fresh thyme
salt and pepper
olive oil
1 galette

What to do:

Preheat the oven to 180 degrees and line a baking sheet with baking paper.

Roll out the quiche dough and poke holes in it with a fork. Spread the inside with the ricotta, leaving about 3 cm free at the edges. Season the ricotta with salt and pepper.

Thinly slice the beef tomatoes and halve the cherry tomatoes. Top the ricotta with the tomatoes.

Fold the edges and beat the egg. Brush the edges with the egg and sprinkle with 2/3 of the Italian herbs. Sprinkle the rest over the tomatoes and top with a pinch of salt and pepper.

Slide the tomato galette with ricotta into the oven for 15-20 minutes or until it turns a nice golden brown. Garnish the summer sheet cake with the fresh basil, thyme and some olive oil.
