Toast with burrata and grilled persimmon

Toast with burrata and grilled persimmon is your new favorite lunch this season. Boring sandwich fillings? That doesn't occur to me. In fact, I believe that you can really put anything on a sandwich. From grilled vegetables and grilled fruit to all kinds of spreads (sweet/savoury) or cheeses. It can't get crazy enough with me. In the spring, for example, I made toast with burrata and grilled peach. This was an absolute hit and this recipe went viral on both Instagram and TikTok. Now I decided to make a fall version of it with persimmon!

Grilled persimmon

What exactly is a persimmon? Also called Sharon fruit, a persimmon resembles a type of tomato in shape and feel. However, it tastes very different. So what does a persimmon taste like? The taste is very sweet and somewhat like a cross between peach and apricot. You eat it just like an apple. The persimmon also lends itself well to salads and so to bread. I make a delicious toast with burrata and grilled persimmon with it. Top the sandwich with parma ham, basil and a little agave syrup (or honey) and you have a fantastic lunch!

What you need:

2 sandwiches of your choice
1/2 bulb of burrata
1 persimmon
2 slices of parma ham
handful of basil leaves
1 tbsp agave syrup or honey
salt and pepper
small amount of olive oil

What to do:

Slice the persimmon. Heat a grill pan and grease very lightly with some olive oil. Grill the persimmon slices on both sides until nice grill marks appear.

Toast the sandwiches in the toaster (can also be done under the toaster or in the oven) and finely chop the basil.

Divide the burrata between the sandwiches and top with the Parma ham, grilled persimmon and basil.

Top with the agave syrup and a generous pinch of salt and pepper.
