Shakshuka with beans is not only a very healthy lunch or nutritious dinner, it is also very easy to make and incredibly delicious. But what exactly is shakshuka?

What is shakshuka?

In the world of culinary discoveries, shakshuka is a name that is emerging more and more frequently. This flavorful dish, with its roots deeply rooted in Middle Eastern and North African cuisine, reflects the region's rich and varied culinary traditions.

The origin of shakshuka lies in the history of the Mediterranean. Although the exact origin is difficult to determine, the dish is believed to have its origins in countries such as Tunisia, Israel and Morocco. The essence of shakshuka lies in its simplicity: poached eggs in a (spicy) sauce of tomatoes, peppers, onions and herbs, served with fresh bread for dipping.

What makes shakshuka so appealing is not only its taste, but also its versatility. It can be enjoyed at any time of the day: as a hearty breakfast, as a tasty brunch or even as a quick dinner. Moreover, the ability to experiment with different spices and additions offers an endless variety of flavors and textures.

Shakshuka with beans

This shakshuka differs from the classic shakshuka with peppers as most people know it. The base is the same, which is a spiced tomato sauce with shallot, cumin and garlic. But instead of the bell bell pepper, I add beans. I go for lima beans and lentils. That way, in addition to the eggs, I add even more protein to the dish.

Lima beans and lentils are healthy foods because of their rich nutritional profile and various health benefits. Both are excellent sources of protein, fiber, complex carbohydrates and essential nutrients such as iron, folate, magnesium and potassium. Protein aids in muscle building and recovery, while fiber aids digestion and stabilizes blood sugar levels. In addition, lima beans and lentils are low in fat and contain no cholesterol, which is beneficial for heart and overall health. What you need:

1 shallot
215 gr lima beans
215 gr (precooked) lentils
200 ml sieved tomatoes
1 tsp cumin powder
1 tsp garlic powder
3 eggs
handful of fresh coriander
35 gr feta cheese
bread for dipping
salt and pepper
olive oil

What to do:

Chop the shallot. Heat some olive oil in a good non-stick pan and sauté the onion in it. Then add the lima beans, lentils, strained tomatoes, cumin powder and garlic powder and season with salt and pepper. Mix and cook gently for a few minutes.

Now make three dimples in the bean mixture and break the eggs into them. Turn the heat to low and put the lid on the pan. Let the eggs solidify. This will take about 5 minutes.

Spread the feta and cilantro over the shakshuka and top with some salt and pepper. Serve the shakshuka with the bread.
