Recipes with red pesto

What you need:

40 gr pine nuts
15 gr almonds
unsalted and unroasted
150 g sun-dried tomatoes in oil
3-4 tbsp. oil from the sun-dried tomatoes
100 gr gr grilled red bell bell pepper
canned
1 clove of garlic
45 g Parmesan cheese
salt and pepper
1 jar (200 gr)

What to do:

Heat a skillet over high heat (without butter or oil) and in it roast the pine nuts and almonds for 1 minute. Keep a close eye on them as this can burn quickly.

Next, put all the ingredients except salt and pepper into a blender and blend to make a pesto. You can also blend with a mortar or hand blender. Decide whether you want the pesto coarse or smooth.

Add salt and pepper to taste.
