What you need:

150 gr whole grain couscous
100 gr halloumi
2 tbsp. honey
2 stalks of spring onion
generous handful of dill
1/2 cucumber
4 tbsp Greek yogurt or cottage cheese
200 gr chickpeas
140 gr corn
salt and pepper
olive oil

What to do:

Prepare the couscous according to package directions and keep aside for a while.

Cut the halloumi into cubes. Heat some olive oil in a frying pan and fry the halloumi in it all around until golden brown. When the halloumi is done, turn off the heat and add the honey and crispy chili oil. Mix together and set aside.

Cut the spring onion into thin rings and finely chop the dill. Cut the cucumber into cubes. Mix the Greek yogurt with half the dill and a generous pinch of salt and pepper.

Put the couscous, halloumi, spring onion, remaining dill, cucumber, chickpeas and corn together in a bowl and season with salt and pepper. Mix together and serve with the Greek yogurt.
