Halloumi persimmon toast

Halloumi persimmon toast is your new lunch obsession from now on. The salty halloumi is briefly fried in crispy chili oil and honey and then you combine it with the sweet persimmon on a bed of soft ricotta. A match made in heaven. Are you going to make it?

When is a persimmon ripe?

A persimmon, also known as persimmon, is a deliciously sweet fruit that is especially popular during the winter months. But how do you know exactly when it is ripe and tastes at its best?

There are two common varieties of persimmon: the Hachiya and the Fuyu. Both have different ripening methods. With the Hachiya, you have to be patient. In fact, this variety is not ripe until it is completely soft, almost like a water balloon. Unripe Hachiya contains a lot of tannins, which gives it a tart taste. Therefore, wait until it is very soft to the touch and almost transparent. Then the fruit is deliciously sweet and unctuous.

The Fuyu persimmon, on the other hand, can be eaten while it is still firm. This variety is nice and crisp like an apple, but becomes sweeter as it softens. So you can eat it in both firm and soft stages, depending on your preference. You can generally find these persimmons in the supermarket.

Always check the color: a ripe persimmon has a deep orange color. Avoid persimmons with green spots, as they are not yet ripe. If the skin is damaged or the fruit feels too soft, it may be overripe. In short, for the ultimate sweet taste, it is important to pay close attention to the variety and softness!

What you need:

2 large slices of bread
4 tbsp ricotta
1 persimmon
125 gr halloumi
1 tbsp crispy chili oil
1 tbsp. honey
fresh thyme
salt and pepper
olive oil

What to do:

Cut the bread into thick slices. If necessary, toast it in the toaster or in a hot frying pan (without butter/oil).

Cut the halloumi into slices. Heat some olive oil in a pan and fry the halloumi in it on both sides until golden brown. Turn down the heat and add the crispy chili oil and honey. Mix well so that all the slices are covered.

Peel and slice the persimmon. Gather the sprigs of thyme.

Spread the bread slices with the ricotta and top with the persimmon, halloumi, thyme, chili flakes and some salt and pepper.
