Crostini with edamame, harissa and feta cheese

This super quick Christmas appetizer will be ready in less than 15 minutes! I myself am a huge fan of anything with bread. Focaccia, bruschetta, crostini, croutons and so on. You can vary it endlessly and it's actually always tasty. This crostini with edamame, harissa and feta is a fantastic flavor bomb. Crispy bread with a creamy spread of feta and chives, yummy edamame and spicy harissa. I served this appetizer to my girlfriends and they all loved it. I'm going to serve it myself at Christmas dinner and I'm sure you will love it too!

What you need:

1/2 fresh baguette
150 gr feta cheese
2 tbsp harissa
150 gr edamame
10 stalks of chives
fresh cress
olive oil
salt and pepper
8 pieces

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper.

Cut the baguette into pieces and place on the baking sheet. Drizzle with olive oil and slide into the oven for 5-10 minutes until the bread has become crispy.

Put the feta along with the chives, 1 tbsp of water and a generous pinch of salt and pepper in a food processor and blend coarsely. You can also mash it with a fork. To do this, you do need to chop the chives first!

Spread the crostinis with the feta cheese and spread the harissa on top. Top with the edamame, cress and a pinch of salt and pepper.
