What you need:

200 gr oat flour
85 gr almond flour
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
pinch of salt
3 ripe bananas
100 gr Greek yogurt
200 ml coconut milk
2 eggs
1 tsp vanilla extract
20 gr coconut rind
+ extra for garnish

What to do:

Preheat the oven to 200 degrees and line a cake pan with baking paper (or grease it).

Mix together the oat flour with the almond flour, cinnamon, baking powder, baking soda and the salt.

Mash 2 of the 3 bananas with a fork and place in another bowl. Add in the Greek yogurt, coconut milk, eggs and vanilla extract and mix until smooth.

Now add the wet ingredients to the dry and add 2-3 tbsp of coconut flakes. Mix together to form a smooth batter.

Divide the batter between the cake pan. Cut the third banana in half lengthwise and place with the inside up on top of the batter. Sprinkle with some more coconut zest and slide into the oven for 50 minutes. Baking tip: Is the cake getting too dark halfway through baking? Cover the cake with aluminum foil and finish baking.
