I have been baking banana bread for about 8 years and can say that I have found the perfect recipe.

Basic banana bread recipe

A basic banana bread recipe is incredibly useful to have because it is versatile, easy to make and relatively healthy. The simplicity of the recipe means that with just a few ingredients, such as ripe bananas and oat flour, you can bake a delicious loaf without much time or effort. This makes it perfect for both novice and experienced bakers. Plus, most of the ingredients are usually already in the house, so you can prepare it anytime, especially if you have overripe bananas that would otherwise be thrown away.

Banana bread is a nice snack because it is naturally sweet, but does not have to contain added sugars. In fact, the banana makes it sweet! It is full of fiber, vitamins and minerals thanks to the bananas, and can be enhanced with nuts, seeds or oatmeal for extra nutritional value. This makes it a nutritious, filling snack that gives you energy without being too heavy.

Whether for breakfast, lunch or a snack in between, banana bread fits well into a daily routine. It's easy to take with you, ideal for sharing, and you can customize it to your liking with different ingredients or flavors.

What you need:

205 gr oat flour
105 gr almond flour
3 ripe bananas
100 milk of your choice
100 gr low-fat French cottage cheese
2 eggs
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
pinch of salt
These supplies are for 1 cake

What to do:

1

Preheat the oven to 220 degrees top and bottom heat and line a baking pan with baking paper.

2

Mix the oat flour with the almond flour, cinnamon, baking powder and a pinch of salt and set aside.

3

Mash 2 of the 3 bananas with a fork. In another bowl, mix the mashed banana with the milk, cottage cheese, eggs and vanilla extract.

4

Next, stir the wet into the dry ingredients and gently spat it in so that it remains fluffy.

5

Pour the mixture into the baking pan. Cut the third banana in half lengthwise and place on top of the banana bread with the inside facing up. Slide the banana bread into the oven for 60 minutes. Is it getting too dark halfway through? Then you can cover it with aluminum foil and finish the baking time. Check with a skewer to see if the cake is done when you take it out of the oven. Does it need a little longer? Then continue baking until the skewer comes out dry.
