For the cake
3 ripe bananas
130 gr cottage cheese or Greek yogurt
3 eggs
1 tsp vanilla extract
1 tsp cinnamon
pinch of salt
150 gr granulated sugar
100 ml of milk
100 gr unsalted butter
molten
380 gr flour
1 tsp baking powder
1 tsp baking soda
For the crumble
125 gr flour
65 gr brown caster sugar
1 tsp cinnamon
1/2 tsp salt
75 gr unsalted butter
molten

What to do:

Preheat the oven to 180 degrees (top and bottom heat). Line a 25×25 cm square baking pan with baking paper.

You start with the crumb layer. For the crumb topping, mix the flour, brown sugar, cinnamon and salt. Add the melted butter and gently stir or knead with your hands until crumbs form. Put this in the refrigerator.

Mash the bananas and place in a bowl. Add yogurt, eggs, cinnamon, sugar, melted butter, milk, salt and vanilla. Mix together.

Add the flour, baking powder and baking soda and mix briefly until everything is blended.

Pour the batter into the square baking pan and smooth.

Spread the crumb topping on top and press gently.

Bake the cake for 40-45 minutes, or until a skewer comes out clean. Let cool completely in the mold before serving.
