Apple pie pancakes

Today we are making these high-protein apple pie pancakes! Pancakes you can eat at any time of the day. For breakfast, lunch and dinner. I usually eat them for breakfast or take them as a snack or lunch for work. The great thing about these apple pie pancakes is that you can easily store them for a few days in a sealable container. So you can enjoy these delicious apple pie pancakes anytime.

What you need:

250 ml drinking yogurt
flavored (apple, pear, etc.)
70 gr spelt flour
25 gr self-rising baking flour
1 tbsp. honey
2 eggs
1 tsp + 1 tsp cinnamon
1 small apple
1 tbsp raisins
oil or butter for frying
pinch of salt
+/- 10 pancakes

What to do:

Put the eggs together with the self-rising baking flour, flour, baking powder, 1 tsp. cinnamon, salt and drinking yogurt in a bowl and mix with a whisk to make a smooth batter.

Heat a dash of oil in a frying pan and let the pan get well hot first. Then turn down the heat.

Now use a tablespoon to make five round mounds in the pan. After 1 minute you can flip the pancakes. They cook quite quickly, so stay on top of them! Repeat until you run out of batter.

Dice the apple and mix with 1 tsp cinnamon and the honey.

Garnish the apple pie pancakes with the apple mixture.
