Apple pie overnight oats with peanut butter

Apple pie overnight oats with peanut butter is the perfect breakfast for me. If you've known me for any length of time, you know that I'm really addicted to oatmeal! I eat it in all different ways, including so in this apple pie overnight oats with peanut butter.

What is overnight oats?

What exactly are overnight oats? Briefly, it means that you "soak" oatmeal in milk overnight in the refrigerator, giving you the substance of oatmeal porridge the next morning. With oatmeal, you cook the oatmeal flakes with milk in a few minutes to make porridge, but if you leave it overnight, you get pretty much the same thing. Only then it is cold. Oatmeal and milk form the basis for overnight oats, but of course you can add delicious herbs, spices or other ingredients. For example, in this apple pie overnight oats with peanut butter, I went for cinnamon and chia seeds. The next morning I then top it off with pieces of apple, raisins and the peanut butter. That way I have a delicious nutritious breakfast for home or to take away!

What you need:

50 gr oatmeal
1 tbsp chia seeds
160 ml milk of your choice
2 tsp cinnamon
1 small apple
1 tbsp raisins
1 tbsp 100% peanut butter
optional: 1 tsp honey

What to do:

Mix the oatmeal together with the chia seeds, almond milk and 1 tsp of cinnamon. I usually put this in a sealable jar or container and then shake it well. Place in the refrigerator overnight (or at least 4 hours).

Dice the apple and mix with 1 tsp of cinnamon and the raisins. You can add honey/agave syrup to this if you want it a little sweeter. You can also choose to lightly fry this apple mixture in the pan, or you can put it cold on the overnight oats. Both of these are delicious!

Top with a tablespoon of peanut butter.
