Classic French toast is made with egg and milk, but I found a way to make plant-based French toast. How do you make vegan French toast I hear you thinking? The trick is to replace the egg with mashed banana. This way you still get that nice crispy crust you normally get with the egg. Season the batter with cinnamon and vanilla and you get deliciously sweet French toast. Looking for more plant-based inspiration? Mash the banana with a fork. Put the cornstarch together with the cinnamon in a bowl and mix with a whisk.
Add the vanilla aroma to the oat milk and mix. Now add the wet ingredients to the dry and also add the mashed banana. Beat with a whisk until you have a smooth batter. It may still be quite "watery," which is not a problem.
