A savory tompouce is a variation on the traditional sweet tompouce, the well-known Dutch pastry consisting of two layers of puff pastry usually with pastry cream in between and a layer of glaze on top.
The savory tompouce generally retains the structure of the classic pastry, but instead of sweet filling and icing, this version is filled with savory ingredients. The puff pastry often remains the same, but the filling may differ. This can include cream cheese, different types of pate, smoked salmon, shrimp, vegetables or other savory flavors, for example. It is often served as a savory treat on special occasions or as part of a savory high tea. I think the savory tompouce is fantastic as an appetizer for the holidays.

Preheat the oven to 180 degrees and line a baking sheet with baking paper.
Thaw the slices of puff pastry and cut them in half. Beat the egg. Place the slices on the baking sheet and brush all the slices with the egg. Sprinkle half of the slices with the Italian herbs. Slide into the oven for 15 minutes until they turn golden brown. Then let cool. Leave the oven on and turn to 200 degrees.
Put the tomatoes together with some olive oil, pepper and salt in a baking dish and roast them in the oven for 10-15 minutes.
Meanwhile, blend the feta along with the milk/cooking cream and a generous pinch of salt and pepper in a food processor. You can also mash with a fork or use a hand blender if necessary. Then put the whipped feta in a piping bag (not a must).
Coarsely chop the basil. Spread the whipped feta over the "bottom puff pastry. Top that with the parma ham, followed by the tomatoes and some basil. Top with some pepper followed by the puff pastry slice with the Italian herbs on top.
