Salad with burrata, peach and prosciutto

Today we are making a summer salad with burrata, peach and prosciutto. A combination that I have been using for years in various dishes, for example this bruschetta or this pasta salad. It is delicious as an appetizer, main course or just for drinks.

On hot days, you want to eat something that is not too heavy, but delicious and special. The juicy, sweet peach pairs perfectly with the salty taste of prosciutto. Burrata makes the whole thing creamy and soft. Together, these flavors create a good balance: not too sweet, not too salty, but just right. The simple dressing of honey and olive oil finishes it off. Burrata and peach

Burrata and peach together are a surprisingly delicious combination. The soft, creamy burrata goes well with the fresh and sweetness of the peach. They complement each other nicely: where one is mild and full-bodied, the other is fruity and light. This ensures that each bite has something different to offer. What you need:

1 bulb of burrata
2 peaches
10 small apricots
handful of blueberries
100 gr cherry tomatoes
100 gr prosciutto
handful of rocket
2 tbsp. honey
1 tbsp olive oil
salt and pepper
fresh basil

What to do:

Remove the stone from the peaches and apricots and cut into wedges. Halve the cherry tomatoes.

Place the peaches, apricots and tomato along with the arugula and blueberries in a bowl. Add in the prosciutto and burrata.

Finish the salad with olive oil, honey and some salt and pepper. Garnish with basil.
