What you need:

200 gr minced beef
2 tsp sambal or sriracha
1 shallot
1 clove of garlic
250 gr udon noodles
precooked/ready to eat
1 tbsp peanut butter
1 tbsp soy sauce
150 ml of coconut milk
1 lime
4 baby pak choi or 1 large one
1 stalk of spring onion
in rings
fresh coriander
sesame seeds

What to do:

Bring a pan of water to the boil and cook the baby pak choi for 5 minutes. Heat a frying pan (without oil or butter) and fry the minced meat with half of the sambal or sriracha. Keep the minced meat warm and separate.

Chop the garlic and shallot finely. Heat some oil in a pan and fry the shallot and garlic in it. Then add the peanut butter, soy sauce and sriracha along with the coconut milk. Stir through and season with salt and pepper if necessary. Also squeeze the lime over the sauce.

Heat the udon noodles briefly in hot water and then add to the sauce. Mix well.

Divide the noodles, baby pak choi and mince among the bowls and garnish with the cilantro, sesame seeds and spring onion.
