Pumpkin stew with arugula

With these temperatures, all you crave is pumpkin stew with arugula, right? Pumpkin stew is delicious for several reasons. I personally really love pumpkin: it's my favorite vegetable. And you can combine it endlessly.

What you need:

500 gr floury potatoes
400 gr pumpkin cubes
10 gr raisins
1 cinnamon stick 
1 tbsp apple cider vinegar 
black pepper
50 gr arugula
40 gr soft goat cheese 

What to do:

Bring a pan of water to a boil. Peel the potatoes and cut into chunks. Boil the potatoes for 20 minutes until soft. After 5 minutes, add the diced pumpkin to the same pan and cook with them. Then drain together and return to the pan.

Soak the raisins in lukewarm water for 5 minutes, then drain. Add the cinnamon, cider vinegar and some pepper to the pan and mash until coarsely mashed. Then mix in the arugula and raisins. Keep a few raisins behind for garnish.

Divide the stew between plates and garnish with some extra pepper, raisins and the goat cheese.
