Overnight oats with strawberries and cottage cheese

Today we are making overnight oats with strawberries and cottage cheese. Looking for a healthy breakfast to take away? Overnight oats I eat almost every day of the week. I find it incredibly convenient to take to work or on the go. I don't have time or don't feel like making breakfast in the morning, so this is the solution! You can vary endlessly, the base is always the same. This time I went for overnight oats with strawberries and chia seeds. Nutritious, filling and very tasty. Prefer a slightly sweeter version? What are overnight oats?

What you need:

40 gr oatmeal
2 tbsp chia seeds
1 tbsp linseed
160 ml (vegetable) milk
150 gr (vegetable) cottage cheese
100 gr strawberries
(fresh or frozen)
optional: mint for garnish

What to do:

Place the oatmeal along with the flaxseed and chia seeds in a sealable jar. Add the milk and twist on the lid. Shake well for 10 seconds and refrigerate overnight. Do you like a slightly sweeter breakfast? Then add some honey if necessary. I don't, because I think it's already sweet enough with the strawberries that will be added later!

Thaw the strawberries. Keep two and mash the rest with a fork. Mix with the cottage cheese.

Divide the overnight oats and cottage cheese in layers in a glass and garnish further with the strawberries and mint.
