I always have periods when I eat them every day and then the waffle iron disappears into the cupboard for a few months. And then after a while I remember that it's actually quite delicious after all. This time I made healthy waffles spinach, oatmeal and banana. Incredibly easy and also very tasty. Making spinach waffles

What you need:

125 gr oatmeal
2 eggs
3 bananas
100 ml almond milk
1 generous handful of fresh spinach
1 tsp baking powder
pinch of salt
toppings of your choice: I used cottage cheese, blueberries and pistachios
+/- 7 wafers

What to do:

Preheat the waffle iron and grease with baking spray, olive oil or other fat.

Put all ingredients (except the toppings) in a blender and blend until you have a smooth batter. You can also use a hand blender.

Now spoon 1 large spoonful of the mixture into the waffle iron and bake for 5 minutes until the waffle turns a little golden brown and is easy to remove from the waffle iron. Repeat until you run out of batter.

Top with your favorite toppings and enjoy!
