What you need:

140 gr spelt flour
65 gr self-rising baking flour
100 gr applesauce
2 eggs
150 ml (vegetable) milk
2 tsp baking powder
40 gr raisins
1 small apple
1 tbsp agave syrup
2 tsp cinnamon
1 tsp vanilla essence
salt

What to do:

Preheat the oven to 180 degrees and line a cake pan with baking paper (or grease it).

Mix the spelt flour with the self-rising baking flour, baking powder, 1 tsp cinnamon and salt. Then add the applesauce, eggs, milk and vanilla essence. mix well. Add the raisins and mix again. Set aside for a moment.

Cut the apple into nice slices and mix in a bowl with the agave syrup and 1 tsp cinnamon.

Pour the cake batter into the cake pan. Tap the tin on the countertop for a moment to get all the air bubbles out. Now put the apple slices on top. They may overlap a bit.

Slide the cake into the oven for 20-25 minutes until it turns golden brown. Check with a skewer to see if it is done. Let the cake cool completely before cutting it.
