Cups of puffed spelt

Today we are making cups of puffed spelt. Sundays are for baking! And preferably semi-healthy ;). This time I actually went for a no bake recipe. Namely these cups of puffed spelt with a nice chocolate coating. I used coconut spread and salted caramel spread, but you can also use Nutella, diced chocolate, speculoos etc. as topping. What is puffed spelt?

What you need:

40 gr puffed spelt
35 gr peanut butter
2 tbsp agave syrup
25 gr dark chocolate
3 tbsp salted caramel protein cream
(or other spread/topping of your choice)
3 tbsp coconut crisp protein cream
(or other spread/topping of your choice)
salt
+/- 10 cups

What to do:

Melt the dark chocolate.

Put the puffed rice together with the peanut butter, agave syrup, melted chocolate and a pinch of salt in a bowl. Mix well until it becomes sticky.

Fill the muffin tins 2/3 full with the puffed spelt. Press down well. Place the cups in the refrigerator for 20 minutes.

Now melt the salted caramel spread and the coconut crisp spread and remove the cups from the refrigerator. Over one half of the cups pour the salted caramel and over the other half pour the coconut crisp.

Put back in the refrigerator for about 40 minutes or until the top has hardened completely again.
