What you need:

For the traybake
500 gr peeled potatoes
400 gr pumpkin cubes
75 gr kale
1 red onion
100 gr feta cheese
1 tsp garlic powder
1 tsp onion powder
salt and pepper
olive oil
For the garlic sauce
2 cloves of garlic
150 ml yogurt of your choice
1 tbsp mayo
fresh chives
fresh parsley
salt and pepper

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper.

Cut the onion into coarse rings and place on the baking sheet along with the potato wedges and diced pumpkin. Drizzle with olive oil, garlic powder, onion powder, pepper and salt. Massage everything well with your hands and slide into the oven for 20 minutes.

Finely chop the dill and parsley and squeeze the garlic cloves. Put together with the yogurt and a pinch of salt and pepper in a small bowl and mix well to make a nice garlic sauce. Set aside for a moment.

Remove the traybake from the oven after 20 minutes and spread the kale on top. Slide back for 5 minutes or until the kale has become nice and crispy.

Sprinkle the traybake with some crumbled feta and serve with the fresh garlic sauce.
