Stroopwafel banana bread: that sounds like the perfect healthier snack, doesn't it? It was time again for a new banana bread recipe! And not just any one: we're going for treacle-waffle banana bread. My favorite cake and cookie combined.

Why is banana bread popular?

Stroopwafel banana bread

I really love stroopwafels. If I could choose one cookie to eat for the rest of my life, I would definitely choose it. Especially a fresh one from the market where they still put the hot syrup in it on the spot I find really not normally delicious. These days I have also discovered that Action sells those little bags with little ones in them. It costs less than one euro and you have a bag full of these delicious little rascals. And you can make lots of delicious things with them, for example this syrup waffle banana bread. Take advantage of it!

What you need:

For the cake
300 gr chickpea flour
3 bananas
3 eggs
10 mini syrup wafers
200 ml milk of your choice
2 tsp baking powder
1 tsp vanilla essence
2 tbsp. cinnamon
pinch of salt
For the quick caramel sauce
1 tbsp 100% peanut butter
3 tbsp agave syrup
1 cake

What to do:

Preheat the oven to 180 degrees and grease a cake tin (or line it with baking paper).

Mash the 3 bananas and put together with the chickpea flour, milk, eggs, salt, baking powder and cinnamon in a bowl and mix with a spatula. Do not use a blender/kitchen machine as it will compromise the fluffiness.

Chop the syrup wafers into small pieces. Add half to the batter and keep half for garnish. Mix again with the spatula.

Pour the mixture into the cake tin and bake the banana bread for about 40 minutes until golden brown. If it gets too dark while baking, cover it with aluminum foil and let it continue baking until done. Let cool completely before cutting it.

Make the caramel sauce by mixing the peanut butter with the agave syrup. Top the stroopwafel banana bread with the caramel and remaining stroopwafel pieces.
