Sweet potato stew with falafel is everything you want on a drizzly evening. It's time for another installment of the stew miniseries. In this mini-series, every two weeks during fall and winter, I share a stew recipe that is anything but your average stew. I am trying to make mashed potatoes sexy again and so far I have succeeded quite well. Previously I made this sweet potato mash with chicken meatballs, cauliflower mash with halloumi, stew with chorizo, pesto and sundried tomato and pumpkin arugula stew with spicy chickpeas. Sweet potato stew with falafel

It was time for a stew with some Middle Eastern influences. I'm a big fan of falafel myself, so why not combine it with a stew? I went for a sweet potato base with leeks and zucchini. Leeks and zucchini always retain their distinct flavor and texture and give the stew a nice bite. I added crispy chili oil and yummy yogurt sauce and topped it off with the falafel. A tasty sweet potato stew with lots of spice and flavor!

Making vegetarian stew

Stamppot is a true classic in Dutch cuisine. Often served with smoked sausage or bacon bits, but did you know that you can also prepare this traditional meal in a surprisingly vegetarian way? By adding falafel, you give your stamppot a new twist that is not only tasty, but also nutritious.

What you need:

1 kilo of sweet potatoes
1 large leek
1 zucchini
200 gr falafel
1 tsp onion powder
3 tbsp yogurt
1 tsp za'atar
1 clove of garlic
1 tbsp crispy chili oil
fresh chives
1 stalk of spring onion
chili flakes to taste
salt and pepper
olive oil
2-3 people

What to do:

Bring a large saucepan of water to a boil. Peel the sweet potatoes and cut into equal pieces. Add them to the pan and cook for about 15 minutes until soft.

Finely chop the chives and spring onion.

Meanwhile, cut the leeks into rings and the zucchini into cubes. Heat some olive oil in a pan and fry the leeks in it for 5 minutes until softened. Sprinkle generously with salt and pepper and now add the zucchini as well. Fry everything for a few minutes and then turn down the heat to keep the vegetables warm. In a frying pan, fry the falafel in some olive oil until golden brown.

Squeeze out the clove of garlic and add to a bowl along with the yogurt, 1 tbsp water, the za'atar and some freshly chopped chives. Blend to make a dressing.

Drain and mash the potatoes. Season with some pepper, salt and the onion powder. Now add the zucchini and leeks as well and mix well.

Serve the stew with the falafel, yogurt dressing, crispy chili oil and chili flakes to taste. Top with some fresh chives and spring onion.
