You won't taste a thing, so success is guaranteed. I went for paprika and zucchini with fresh herbs and strained tomatoes, but if you prefer other vegetables, that's possible too.

Sauté everything gently with some onion and garlic for extra flavor.

The secret? Puree the sauce! This eliminates the bits of vegetables and gives you a smooth, creamy sauce that is packed with vitamins. For extra flavor, add herbs like oregano, basil or thyme. Want a creamier version? A dash of cooking cream or a spoonful of ricotta works wonders.

Spaghetti with lots of vegetables

You probably already knew that making your own sauces is much tastier anyway. I've been saying that for years. Especially when you just use fresh vegetables from the supermarket, you can't go wrong. In the beginning I was always surprised at how easy it actually was. I always thought it would take much more time (or money) to make your own sauce, but nothing could be further from the truth. It's really fast and much cheaper than those expensive jarred sauces that are often full of junk and don't really contain any vegetables at all. Would you like some more inspiration for sauces with hidden vegetables? Then try this orzo with kale sauce or this pasta with pumpkin sauce. Both also very simple and incredibly flavorful!

What you need:

200 gr spaghetti
150 gr cherry tomatoes
4 peppers 
200 ml passata
50 ml of cooking cream
1 zucchini
fresh basil
40 gr Parmesan cheese
2 cloves of garlic
chili flakes to taste
salt and pepper
olive oil

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper. Clean the bell peppers and cut into chunks along with the zucchini. Drizzle with olive oil, salt and pepper and place on the baking sheet. Roast for 15 minutes in the oven.

Cook the spaghetti according to the package directions. Catch a small cup of cooking liquid when draining.

Place the roasted peppers and zucchini along with the garlic, some fresh basil, passata and a pinch of salt and pepper in the blender and blend until smooth (or with hand blender).

Halve the cherry tomatoes.

Heat the sauce in a saucepan and add the cooking liquid and cream. Season additionally with salt and pepper, if necessary. Let simmer gently for a few minutes.

Serve the spaghetti with the sauce, cherry tomatoes, fresh basil, Parmesan cheese and some chili flakes.
