Quick muffins for Valentine's Day

Still looking for some last minute inspiration for Valentine's Day? It is a popular tradition to make delicious baked goods and share them with loved ones on this day of love. Baking can be a fun way to spend time with your partner or to let someone know how much you care. Whether you make cookies, cake or some other treat, it is a way to show that you have put thought and love into preparing something special.

Muffins for Valentine's Day

Although I am not a huge baker myself, I can really enjoy making muffins or cupcakes. Personally, I always use "healthier" ingredients. For example, I always replace butter with applesauce or banana and I don't use sugar in my baking. They still taste hearty and sweet that way and that way I can eat a lot of them without guilt. I used my own basic muffin recipe and added a quick frosting and hearts as a topping. This way you can surprise your loved one with a super cute pastry. What you need:

For the muffins
220 gr oat flour
100 gr applesauce
2 eggs
100 ml of milk
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla essence
pinch of salt
For the topping
2 tbsp dairy spread
1 tbsp powdered sugar
1-2 tbsp ruby chocolate chips

+/- 8 muffins

What to do:

Preheat the oven to 180 degrees and place muffin tins in a muffin tin.

Sift the oat flour and place in a bowl along with the cinnamon, baking powder and a pinch of salt and mix well. Then add the milk, eggs, applesauce and vanilla essence and mix together. Is the batter still too thick? Then add extra milk if necessary!

Divide the batter among the muffin tins, tapping the bottom of the mold on the countertop briefly to remove all air bubbles. Slide into the oven for 20 minutes. Let the muffins cool briefly before removing them from the mold.

Meanwhile, melt the ruby chocolate in the microwave and mix with the dairy spread and powdered sugar to make a smooth frosting. Place in the refrigerator for a while to let it stiffen, if necessary.

Spread the tops of the cooled muffins with the frosting and sprinkle with sprinkles of your choice.
