Cocktails for New Year's Eve

What you need:

6 oil balls
100 gr white chocolate
8 passion fruits
3 leaves of gelatin
1 tsp vanilla essence
25 ml prosecco
edible flowers

What to do:

Cut the gelatin leaves into pieces and soak briefly in a bowl of water. Then melt in a saucepan.

Halve the passion fruit and scoop the flesh into a bowl. Add the vanilla essence, prosecco and melted gelatin and mix well. Let stand for 15 minutes until a thick jelly forms.

Meanwhile, melt the chocolate au bain marie and then dip all the oil balls in the chocolate. Let dry for a while on a piece of baking paper.

When the chocolate has dried slightly, add the passion fruit jelly. Garnish with an edible flower and let harden for a few minutes in the refrigerator (or in a cool room).
