What you need:

400 gr chicken thigh
300 gr pearl couscous
2 small shallots
2 cloves of garlic
1 lemon
250 ml chicken stock
1 tsp chili powder
muy picante for the enthusiast ;)
2 tbsp garam masala
350 gr green asparagus
salt and pepper
1 tbsp butter
olive oil
fresh parsley

What to do:

Pat the chicken dry and put together with some olive oil, the chili powder, half of the garam masala and some salt and pepper in a bowl and massage the spices into the meat. Leave for a few minutes.

Meanwhile, chop the onion and finely chop the garlic. Cut the undersides off the asparagus and then cut into chunks.

Heat some olive oil in a thick-bottomed pan and fry the onion in it. Add the chicken and fry for about 7 minutes until golden brown. The meat does not need to be fully cooked inside. Remove the chicken from the pan and set aside, leaving the heat on.

Finely chop the parsley. Heat the butter in the same pan and then add the asparagus to it. Fry for a minute and then add in the pearl couscous, the juice of the lemon and half the parsley and the remaining garam masala. Stir for a minute and then add the broth. Bring to a boil and then turn the heat down to low. Place the chicken pieces back in the pan with the pearl couscous as well and cover for 15 minutes. Simmer gently until the pearl couscous is done.

Serve the pearl couscous with chicken and green asparagus with some lemon zest and the remaining parsley.
