Risotto generally has a slightly longer cooking time, but this version with pearl couscous changes that. The cooking time for this risotto is just a few minutes. Then you season it with Parmesan cheese and I find it even more delicious in texture than regular risotto. Chop the onion and squeeze the clove of garlic. Heat some olive oil in a pan and sauté the onion and garlic in it for 2 minutes. Add the pearl couscous and fry for 1 minute. Now add the broth and let the pearl couscous cook gently until all the liquid is absorbed.
Pat the chicken breasts dry and sprinkle both sides with the chicken seasoning. Massage well. Heat some olive oil in a frying pan and fry the chicken breasts in it on both sides until golden brown.
Stir the Parmesan cheese, garlic powder and some pepper into the pearl couscous. Finely chop the chives and ris some sprigs of thyme.
Serve the pearl couscous with the chicken breasts and garnish with the chives, thyme, some pepper and extra Parmesan cheese.
