Pear-ricotta puff pastry tarts

These pear ricotta puff pastry tarts are the perfect vegetarian appetizer. You make them in just a few minutes and you only need a few ingredients. You can eat them either cold or hot and keep them in the refrigerator in aluminum foil or a sealed container for a few days. What you need:

4 slices of puff pastry
100 gr ricotta cheese
2-3 small pears
fresh thyme
honey
salt and pepper
olive oil
8 pieces

What to do:

Preheat the oven to 200 degrees and line a baking sheet with baking paper.

Thaw the slices of puff pastry on the countertop and cut them in half. Place the eight half slices on the baking sheet and, using a knife, cut rectangles in them half an inch from the edge. Do not cut all the way through!

Cut the pears into thin slices. Spread the slices of puff pastry with ricotta and top with the pear and some salt and pepper. Repeat for all the slices. Drizzle the tarts with some olive oil and slide into the oven for 10-15 minutes until the tarts turn golden brown.

Garnish with the honey or agave syrup and fresh thyme.
