Oatmeal cake with raspberries

Today we are making this healthy oatmeal cake with raspberries. For nutritious and healthy snacks, you've come to the right place. I am not a huge baker and by that I mean cakes and pies. I am more of the healthier snacks with, for example, applesauce instead of butter or banana instead of sugar. These bakes are just as tasty as the regular ones, but suitable for every day. Top if you ask me. It's also January, so I guess a lot of people want to eat a little healthier. Then a healthy snack like this is a godsend. Healthy snacks that taste like cake. What more could you ask for?

Oatmeal cake with raspberries

I make this oatmeal cake almost every week. The base remains the same, but you can vary with the fruit you use. Previously I made this oatmeal cake with speculaaskruiden (and pepernoten) or this oatmeal cake with pear and banana. All delicious, nutritious and super easy to make.

What you need:

130 gr oatmeal
30 gr almond flour
230 ml unsweetened almond milk
100 gr unsweetened applesauce
1 egg
handful of raspberries
1 tsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
2 tbsp almond shavings
pinch of salt
+/- 9 servings

What to do:

Preheat the oven to 180 degrees and grease a baking dish.

Mix the oatmeal with the almond flour, baking powder, salt and cinnamon. Set aside for a moment.

In another bowl, mix the almond milk with the egg, applesauce and vanilla extract.

Now add the wet ingredients to the dry ingredients and spatula together.

Pour the oatmeal batter into the baking dish and top with the raspberries. Top with the almond shavings.

Bake in the oven for about 30-35 minutes until the oatmeal cake with raspberries turns golden brown.
