Oatmeal cake with peppercorns

This oatmeal cake with pepernoten is a lekekr sinterklaas bake that tastes like filled speculaas! Sinterklaas will arrive in the Netherlands in 10 days. So it is time to get started with Sinterklaas baking. The pepernoten are flying around your ears. A I love baking and especially with delicious autumn flavors. This healthy oatmeal cake with peppernuts tastes like autumn! The combination of speculaas spices, chai and vanilla make it a real treat. Suitable as a Sinterklaas bake, but it can really just go any day. The taste is a bit like the outside of stuffed speculoos. Sounds good, right?

Variety with fruit

This delicious healthy oatmeal cake is also hearty with fruit. I previously made an oatmeal cake with pear and banana. The basic recipe is the same and the taste is just as delicious.

What you need:

130 gr oatmeal
30 gr almond flour
230 ml of milk
1 cup sugar-free applesauce
(100 gr)
1 egg
2 tbsp baking powder
2 tbsp. specula spice
1 tsp vanilla extract
pinch of salt
handful of peppernuts
almond shavings
Topping
2 tbsp. powdered sugar
1 tsp water
These supplies are for 9 servings

What to do:

Preheat the oven to 180 degrees and grease a baking dish.

Mix the oatmeal with the almond flour, baking powder, salt and speculaaskruiden. Set aside for a moment.

In another bowl, mix the milk with the egg, applesauce and vanilla extract.

Now add the wet ingredients to the dry ingredients and spatula together.

Pour the oatmeal batter into the baking dish and top with the peppercorns and almond shavings.

Bake in the oven for about 25 minutes until the oatmeal cake turns golden brown. Let it cool before removing it from the mold and cutting it.

Mix the powdered sugar with the water to make a smooth icing and serve with the oatmeal cake.
