Oatmeal cake with apple and speculoos

Today we are making oatmeal cake with apple and speculoos. Because it's time again for a new variation of my favorite healthy snack: oatmeal cake! This delicious snack is nice and crispy on the outside and soft and chewy on the inside. Earlier I made a oatmeal cake with raspberries, an oatmeal cake with speculoos and an oatmeal cake with pear and banana.

Oatmeal cake with apple and speculoos

This oatmeal cake with apple and speculoos is great to take to the office or to enjoy on the couch every night. I often make a healthy bake on Sunday evening, so I can eat it throughout the week. That way you have something tasty ready every day.

What you need:

130 gr oatmeal
30 gr almond flour
230 ml almond milk
1 large apple
30 gr raisins
100 gr applesauce
1 egg
1 tsp. specula spice
1 tsp baking powder
1 tsp vanilla extract
pinch of salt
2 tbsp almond shavings
2 tbsp. Speculoos
1 Speculoos cookie
1 cake

What to do:

Preheat the oven to 180 degrees and grease a baking dish.

Mix the oatmeal with the almond flour, baking powder, salt and speculaaskruiden. Set aside for a moment.

In another bowl, mix the almond milk with the egg, applesauce and vanilla extract.

Now add the wet ingredients to the dry ingredients and spatula together.

Dice the apple and mix into the batter along with the raisins.

Pour the oatmeal batter into the baking dish.

Bake in the oven for about 30-35 minutes until the oatmeal cake turns golden brown. Let cool before cutting it!

Crumble the cookie and spread the crumbs along with the almond meal over the oatmeal cake. Top with melted Speculoos.
