It doesn't matter if you have never made focaccia before or if you are an experienced bread baker, because this recipe for focaccia is mega easy. You just need to mix everything well and then let the dough rise by itself. Also, you don't need any complicated equipment or ingredients.

In addition, you can completely put your own spin on the toppings. For example, don't like olives? Then replace them with something else you like, like maybe rosemary, feta, or parma ham. Even sweet toppings are an option; think figs, cranberries, or dates, for example.

Focaccia without kneading

If you like to make Italian bread without kneading, then this recipe is perfect for you! For this no-knead focaccia, all you have to do is mix the ingredients and let it rise for a while. The result is a delicious soft and fluffy texture, so the ideal way to make your own bread.

What flour to use for focaccia?

Traditionally, high-quality wheat flour, also known as "00" flour, is used for focaccia. This type of flour is actually very finely milled, which creates that perfect light and airy texture.

Do you only have plain flour in the house? That's no problem, even with this you can make a tasty focaccia just as well. Self-rising baking flour, on the other hand, is not so useful, because it already has a raising agent (baking powder) added to it. In fact, it is better to use only yeast for making bread, otherwise you won't get the same airy texture.

Toppings for focaccia

The possibilities for toppings on focaccia are virtually endless. Classic Italian ingredients are rosemary, sea salt and olive oil. But you can also try other ingredients, such as sun-dried tomatoes, olives, fresh herbs or even caramelized onion. The great thing about focaccia is that you can personalize it to your own tastes and preferences.

What you need:

For the dough
470 gr lukewarm water
2 tsp sea salt
1 tbsp olive oil
7 gr yeast
560 gr patent boom
Other and toppings
6 tbsp olive oil
2 sprigs of fresh rosemary
1 tsp dried oregano  
30 gr black olives
30 gr green olives
handful of colored cherry tomatoes
sea salt to taste
1 focaccia

What to do:

Mix the water with the salt, olive oil and yeast. Stir with a whisk and let stand for 2 minutes. Then carefully spoon in the flour. Cover the bowl with a plate and set aside in a warm place for 30 minutes to rise.

Wet your hands and do 4 stretch-and-folds. That is, you pull the dough straight up at the top and put it straight down again at the bottom. Turn the bowl a quarter turn and repeat. Do this 4 times until each side has had its turn. Wet your hands again after each strecht so that the dough does not stick to your hands. Cover again with a plate and let rise for 30 minutes. Repeat this step 4 times.

Now cover the bowl with cling film and refrigerate for 10 hours.

Spread a generous amount of olive oil (about 4 tbsp) on a baking sheet and place the dough on top. Spread evenly with your fingers. Cover again with a tea towel and let rise for another 1 hour.

Preheat the oven to 180 degrees top and bottom heat. Spread another 2 tbsp of olive oil over the dough and now gently go in and out of the dough with your fingers, making the well-known "dents" in the focaccia. Spread your toppings over the focaccia (don't forget to oil them a bit) and slide the focaccia into the oven for 20 - 25 minutes until it turns golden brown.
