Healthy salted caramel brownie with peanut

For years I have been suffering from a severe peanut butter addiction, so these healthy salted caramel brownie with peanuts are the ultimate comfort food for me. The chille is that you can eat lots of them, guilt-free. This is because the healthy salted caramel brownies themselves contain no added sugars or butter. They are sweetened with applesauce and vanilla extract, among other ingredients, and thanks to the oat and almond flour, they are incredibly fluffy. That doesn't mean "regular" brownies are wrong, but if you eat as much as I do in a day, it's quite nice if you can snack somewhat healthily and nutritiously ;).

What is salted caramel anyway? Salted caramel, that blissful flavor combination, originated in the 1970s. French pastry chef Henri Le Roux is hailed as a mastermind. His impulsive salt addition to caramel created the perfect sweet-salty explosion. Quickly loved worldwide, this delicacy can now be found on almost every menu and at every bakery. Personally, I always make a quick caramel from agave syrup (or honey) with a tablespoon of peanut butter. Super easy, nutritious and what's more, it gives you a special peanut flavor. If you add a little sea salt, you have perfect and quick salted caramel. These healthy salted caramel brownies with peanut will be your favorite snack or snack from now on!

What you need:

Brownie
160 gr oat flour
35 gr almond flour
30 gr cocoa
1 tsp baking powder
pinch of salt
150 ml milk of your choice
100 gr unsweetened applesauce
2 eggs
1 tsp vanilla essence
100 gr low-fat yogurt
Topping
2 tbsp. honey or agave syrup
1 tbsp peanut butter
handful of unsalted peanuts
pinch of coarse sea salt
9 servings

What to do:

Preheat the oven to 180 degrees and line a square baking dish or baking pan with baking paper.

Mix the oat flour with the almond flour, cocoa, baking powder and a pinch of salt.

In another bowl, mix the milk with the applesauce, eggs, vanilla essence and yogurt. Then add to the dry ingredients and gently spat together.

Pour the batter into the baking dish and slide the brownie into the oven for 30 minutes. If it gets too dark halfway through, cover it with aluminum foil and continue baking until the half hour is up. Then remove it from the oven and let it cool completely in the mold.

Mix the agave syrup with the peanut butter and half a tsp of the coarse sea salt. Spread this salted caramel over the top of the brownie and top with the peanuts and some extra coarse sea salt.
